I'm at the point where Joker's thugs are searching for Dr Young ( I think) notes, and there's 10 unarmed ones in the room. I need to beat em all, but for the life of me I can't do it ( on hard). I mean, I'll sit there for like 5 whole minutes hitting, evading and countering there attacks for only one of the 10 to die, and then I start taking to much damage and dieing.

Is there any tips and tricks to taking on large crowds of unarmed mobs? I can't stealth because they always see me and turned round so I'm guessing it's programmed in.

Which room are you talking about exactly?

You need to make good use of your weapons. When batarangs are selected as your primary weapon, press L1 (do not hold the button) for Batman to quickly throw them at enemies. They should get knocked down. If you can put some distance between you and them, set down some explosive gel and detonate when they're within range. This is a great way to take people out.

Another tactic is to try isolating one guy from the group, knock him to the ground as quick as you can, then finish him off with triangle (or square + triangle) before the others come to his rescue. Other than that, don't mash square too much for hits, because you always need to be prepared to hit triangle to counter other attacks.

It was the room where 10 of them are ripping it up, searching for the formula for the venom ( even though I had just destroyed it, hehe).

I used the method of exploding, worked very, very well! Would put them in a line with a little distance between, go BOOM! then knock out a few, then repeat.
