Hope this isn't a dumb question, but I think you have to collect certain items to complete the shop quests... is that right? In which case, can I sell items at any time, at any shop? Or do you have to stock them up until you have all of them, then sell them at one location?

I have been selling items randomly... willy nilly even... all over the place, at different shops. Now I wonder if I should have collected them all up and then sold them at one time?

Be very careful selling items before you have done the shop quests, incase you sell what you need.

The shop quests are done at one location, it is the shops that are in the same area as Ezio's hideout, they will have a white square around them, when you speak to the shop keeper at the bottom of the list it will say Shop Quest, check here for what you need to complete for each shop type.
