Level up vitality and endurance first to the levels you need (don't take endurance beyond 40 unless you want the equip weight). Find a weapon you like and get strength and/or dexterity to the required levels for it. Then as you're a sorceror, put everything else into intelligence (unless you decide against magic - but decide early lol).
When you get to a street with some thieves and decaying dogs, you'll hear a voice behind a door - you'll want to let him out 
Equipment > stats. Farm titanite* as soon as possible and upgrade a weapon.
* You can buy titanite so you can just farm souls instead.
Rolling works slightly different than Demon's Souls:
Equip weight < 25% carry weight = best roll
EW < 50% CW = OK roll
Else terrible roll
Level 3
The safest way to play seems to be to use a spear and attack from behind your shield (Hold L1 and press R1).
This worked for me on Demons Souls and it worked for me on Dark Souls too.
Level up endurance which increases your stamina. Once you're stamina has gone (due to blocking or taking damage) you're defenseless, so it's a very important attribute.
