How to use the relics?

I have completed God of Was: Ghost of Sparta on Normal mode. I collected all of the relics during the game.

 

I have started a new game selecting 'yes' to use all of the saved data and collected relics. 

 

In the new game I am not collecting 10x red orbs from the King's Ring, I can not pull off the Sparta Kick (pressing L and X together) having won Aphrodite's Ambrosia, I have no idea how the Owl works and I do not have infinite magic.

 

Do I have to turn them on somehow? Can anyone explain how I use all these powers I should now have?

Just adding to this, I have definately collected the following items during the game:

Callisto's Armlet

Athena's Owl

Aphrodite's Ambrosia

The King's Ring

The Bonds of Ares

 

When I start a new game All I can see under "Relics" are 

Poseidon’s Trident

Aphrodite's Ambrosia

 

Are the other items supposed to show here?
