I am not sure, since I haven't made many mods or karts on the game. But, I believe that you can turn the sensitivity down on your PS VITA for the touchscreen from the settings menu. Also, I have found that if you are skewing or changing the height of a sticker instead of moving your finger over the slider, just grab the slider and barely rotate your finger, in the direction you need, and it will not change it so dramatically.
The other option you have, since the game is crossoverable, you could always just create the car on the PS3 and just load the sticker set onto the kart on Roadtrip.
