I'll admit this isn't very impressive compared to some of the ones already posted, but here's my best attempt:

Over the course of time I have owned this game I have created 3 Mods, 3 accompanying karts and 1 pretty good track.

Mods: Helghast (Original and V2 updated version), Oranj (Driver for Serenity Kart), Biohazard (Several versions with varying additions if i remember correctly)

Karts: QuickHelghanKart, Biohazard (Again, several versions lol), Serenity(Original and V2)

Track: Climb and fall - named due to the epic hill climb and epic route back down into the city/seaside.
