I have no experience of Move controllers or even Wii controllers in racing games but I would imagine the controller would be held horizontally and the you would use it like a steering wheel, right hand down goes right, left hand down goes left.

For punching, surely!

i could imagine that. and honking... if they would just bring back horns.
or holdin it sideways and shift it left and right to mimic the moves on a bike
and turning it like a stering wheel...

but as usual i don't think they will ever implement this. well... maybye within a year or so

No, but I have used a steering wheel.

While we arent talking driving sim levels of realism, it does feel good fun. Bikes feel strange to say the least, but if you ever get chance, take a buggy round buena vista. The hairpins and chuckability of the buggy feel great.
