I want to get the crushing trophy for the game, and I have done it on hard, but it does not give me the choice on the new game menu, it only let's me choose crushing on the chapters menu, but will I get the crushing trophy for doing it through the selection of chapters or do I have to start a new game and if so, how do I select crushing difficulty?

you have to go to 'chapters' and there select crushing. Do it from the very beginning and when you have finished a chapter a tick will appear on the crushing difficulty.
