It depends on whether your after longevity aswell skyrims longevity is really only in the fact of if your replay it again where as fifa 12 you have the online side.
Personally i gave up on fifa games as so many people will drop from the game if they are losing which ruins the enjoyment of the game.
And 11 v 11 games when the only position you can usually get is a defender & if your playing the game properly you the only 1 who's actually in defence while the rest of the team are rushing up field to try & score.

I've never really be one for sport games and skyrim did have some issues on PS3 but I think they've sorted it now and although I haven't played either I do know people who have so I can at least let you know what they thought
Skyrim really seems to be like every other Bethesda game really, it can last you quite a while if you really get into it and try to find and complete all of the side missions but as for main story line you're probably not looking at very long so I would say Skyrim if you are willing to really play it and attempt to complete everything.
As for FIFA, it is likely to be like every other FIFA game with a few minor changes but overall it is still the same game and I'm sure that playing online no game would ever really be the same so you could take that into consideration when deciding.
my end decision...go for Skyrim
As for possible Heavy Rain or Red Dead Redemption - Heavy Rain has a brilliant story but bear in mind that it is all cutscenes and different possibilities, it's considered an interactive drama rather than a game and Red Dead Redemption is a great game, there is also going to be a fortnightly community event so if you did get it then you could join in with that as well.

Lemmings were brilliant, they had something for everyone even if you just wanted to see hundreds of lemmings explode into fireworks

I'd pick skyrim out of those two, there is supposedly 300 odd hours of content.
