What do you mean by a remote reset?
If you are able to connect the PS3 to the tv via AV, bring up the XMB. navigate to System settings and choose "Restore Default Settings". All the settings will be reset to their factory defaults which should resolve any problems caused by incorrect setup.
If you connect a HDMI cable after that it should auto detect it and ask if you want to use it.
Also, I don't think safe mode would be much use in this situation, but to enter it regularly, you'd turn it on and off again by holding the power button till it goes on, then off. And then release then hold again till it double beeps.

Some people have a lot of difficulty getting into safe mode. It seems the best way is to turn it off, then hold the power button right through till it goes off again, then wait about 5 seconds and do it again. The second round is usually more successful and more likely to double beep.
It might be an idea to try a new HDMI cable, and try another TV and see if it works okay.

Ah, I wasn't sure whether or not it was beeping at all.
Here's a thought, try connecting up the PS3 using the Scart cables that came with it, and see if you can play sound using that in SD. If you're unable to use the reset beeps, you'd be best setting the PS3 to standard definition in Display Settings prior to swapping the cable so you don't get a blank screen.
