My PS3 is sitting on firmware version 3.55 (he’s a little antisocial) and has quite a bit of catching up to do. My question is do u have to install every minor version sequentially, ie , 3.56, 3.60, 3.73, 3.72, 3.70, 3.66, 3.65, 3.61, 4.00, 4.10, 4.11, 4.21
Can you jump right to 4.21? will it contain all previous updates as well?
I will be updating via USB so wondering how many files to download.
I googled and googled and searched other sites but without a definitive answer on this one.

Nope, 4.21 includes all the updates you need to bring your console up to date.
How many files, you ask: only 1 download required.
You can find 4.21under the PlayStation 3 section of the PlayStation website.
before you download the update you need to set the USB stick up correctly:
1: ensure your USB drive in FAT32 format
2: once you have re-formatted the flash drive you need to create a folder inside the flash drive named PS3 (ensure P & S are both in capitals)
3: inside the PS3 folder, create another folder named UPDATE (all in capitals once again)
4: download 4.21
5: Move the downloaded file to the UPDATE folder (ensuring the downloaded file is saved as PS3UPDAT.PUP)
6: Insert your flash drive into your PS3
7: From the XMB (Cross Menu Bar) go to: settings > system update > external storge > press X
And you're done
