Borderlands.

There's not really any difficult ones, but nearly all of them encourage you to play the game and explore as much as possible, as well as trying out other characters.

I think Borderlands takes it for reasons already mentioned but Kudos to both for not having any ridiculously difficult online trophies.

Red Faction Gurrilla  They can be a pain in the butt to get some of them, but once you have it they are well worth it.

Demon's Souls, you don't get anything for simply turning the game on, you have to earn them, but they're all achievable.

Actually I've changed my mind.  Uncharted 2 has great trophies which add things to do to the game but don't ask the impossible.
