I'm seriously considering to become a Ps Plus members, especially considering the free games that the subscribers get every month.
I know that those games are "rented" and not actually owned, but what about the datas? What I mean is, if I play Little Big Planet 2 and then my memebership expires, if I then buy the physical version of the game would I be able to access to my LBP2 saves?

If you buy a digital version they should be fine. If you buy a disc version the saves may not be compatible.
^ This. Digital download versions of games tend to have a completely different product code from their physical counterparts, which renders the saves incompatible with one another.

Games that are BOUGHT under the PS+ scheme will always be playable, even if you allow your PS+ subscription to lapse.
It's only FREE games/demos that are exclusive to PS+ users that will be rendered unplayable if a subscription is allowed to lapse.
.
Not all free games will be lost as there have been quite a few that have been given to keep permanent.
