I know the store usually updates in general either Wednesday or Thursday for me every week, but when does it update for the PlayStation Plus section?

Only SCEE know they have not updated the blog with Julys content or release day. 

PS+ Core content did update Every First Wednesday of the month.

Mid month content was added a few times... As a bonus

All that Went "Out the Window" with the changes to PS+.

With only Full games being the core product from now on, with the odd discounts on software per week.

All past info is now out of date.

The only info is that 3 games will vanish at the next update and 3 others will be added as replacement.

That's all. If they stick to the first Wednesday then July the 4th, Americas independence day, will be the Next Core PS+ update.
