Games I have not platted and the reasons why 
Battlefield: Bad Company - got bored with it.
Dead Space - brother finished it first so lost interest when I knew what happened.
Far Cry 2 - By far the worst game I have ever played and the only one to make me cry at its crapness.
Fifa 09 - Servers shut down.
Killzone 2 - couldn't have been bothered with the online ones when I could barely kill Radec on normal. Would never beat him on elite.
Littlebigplanet - loaned it from a mate and never got it again after.
Mirrors Edge - It kept trying to rebuild my PS3s database so I burned it with fire >.<
Motorstorm Pacific Rift - My motoring skills weren't up to scratch 
Quantum of Solace - need the online ones. May go back to this and finish it eventually.
Resistance 2 - didn't even try. 10,000 kills trophy would take too long.
Wolfenstein - got bored with it so never bothered.
Wolverine - still keep meaning to go back to this one. I know I could plat it easily but I just don't enjoy playing the game at all
Plats I'll get around to:
I don't think there is any really, I tend to play and finish games while they are fresh... FFXIII was the only plat I put on hold and then eventually finished...
Plats I almost got:
Resistance 2 - 10000 kills. Need I say more?... the only thing in my way.
Dead Space 2 - platted the first, but Hardcore mode?... only 4 save opportunities and no checkpointing?... seriously?
The list of games I'll never plat is too long to list. None of my plats to date have been ball breaking difficult. (But none have been cheap and nasty trophy games either).. I'm in it to enjoy the game, and if a game difficulty becomes too frustrating (Killzone 2 and 3) I'm just not going to bother frustrating myself that much..

Not hardcore enough (more like) 
For me
Assassin Creed Revelations : Can't be bothered
Crysis 2 : *runs crying to Narrator"
Dead Space 2 : Need a few weeks off to practice for Hardcore
Uncharted 3 : Saving it for a rainly day
For me, it's quite a mixture of games:
Uncharted 2 - I only need the one where you kill them with one shot after softening them up with punches, unfortunately i either kill them when i'm punching or don't soften them up enough and put them down with 2 or 3 bullets
De Blob 2 -bought it from my local Asda for a fiver, thinking it would be great for the kids. I decided to test it and loved it 
. Only have a few bronzes to clean up and i'm done.
Batman AA - this one has been a thorn in my side for ages, i only have the one where you have the maximum combo hit during fighting and i'll be done. I never quite manage it.
God Of War 1,2 & 3 - I'll eventually go back and clean all the outstanding ones up
I'm sure i have more, but that's all i can think of from the top of my head......

The God of War series is one of those where I'm missing about 3 or 4 each game... I think most people can guess what they are.. 
The Challenges in all 3 games... came so close and was determined to finish the Challenges in GOW2, but the second to last one got the better of me in the end..
The first game, well... completing the platforming and timed spike sequences was bad enough the once... Speed running the game, nah thanks... and the third game would require beating a hard difficulty, which I'm not interested in attempting..

1. Dead Space 2 - Hardcore mode. I can do it on a skill basis (I've done much tougher things) however what I can't get is the necessary time for the long sessions needed between saves. It's a frustrating trophy, knowing I can get it based on ability but not having the time. I dislike trophies that require a mass effort in a single sitting, that's not skill or effort based, that's lifestyle based (I even did the R2 10k trophy, because I could do it in multiple sittings and didn't have to dedicate hours in an individual attempt). I might have the time ... when I retire 25-35 years from now ... but I guess it'll be too late by then.
2. WIpeoutHD - I'm just not good enough at it, I don't have the skill to plat this game, I can barely finish some races on normal, never mind win on the hardest setting!
3. Warhawk - I used to be really good at it but stopped for too long between release and trophies. What with the learning curve needed now to compete, again I just don't have the time to dedicate to get good enough to compete with those still playing and earn the necessary trophies.
All the rest of the games on my trophy list I've platinumed but I've written off those 3. Of them it's Dead Space 2 that frustrates me the most because I know I could if not for the sodding save limitation forcing extended gaming sessions to get it, that just doesn't fit in with my busy schedule.

On these, just some hints:
If you get the infinite magic costume (can't remember how to unlock it) you can spam the electricity power and murder everything, takes hardly any time at all to complete with that method (especially if done on easy)
The 3rd game hard isn't as tough as the hard of the other 2 games, doable if you did it in normal.
I can't help with the challenges though, those were horrible! Especially the first as you can't sodding save!

If you've not tried this method, used the evade (xx?) button instead of the block, far far less chance of messing up and being hit.
