I find Dragon's Dogma way more fun than Skyrim. I'd say Dragon's Dogma does the things that Skyrim is weaker at really well, i.e combat. Combat is really deep, fun, actually makes me go "Wow" and laugh out loud and so far isn't getting old. Dragon's Dogma has held my attention almost solidly since it came out and that is very rare for me as I like to play a variety of games.
Imagine a Dragon's Dogma sequel with the detail in the world that Skyrim has!
