Now I'm level 63 it gets kindof boring with how much damage output you can dish out.
Bow does about 500 damage with paralysis and 40 frost.
Sword does 180 damage with level 25 30 second fear and 40 fire.
Armor gives me 500 ratin and infinite destructive and conjurative mana or bonus to archery sneak pickpocket and infinite illusioin, or combat upping genreally.
Even my light armour does 300 rating, and ive got like 360 mana and stamina + 480 health.
Nothing is a challenge, ancient dragons take 3 seconds, dragon priests take 1 or two hits and everything else takes 1 hit.
I only neead marriage and 100 k for platinum so thats out.
What can I do to make it harder without starting a new game(thats just boring)?

Eventually, you'll just be done with the game for awhile. If you roleplay, an idea for a new character might pop into your head and you'll get excited at the prospect of playing the game a new way.
If you don't roleplay, the new DLC should do the trick. Or, maybe you'll just have enjoyed the massive amount of time you've had with the game and it will be a fond memory as you move on. I still play Morrowind and Oblivion sometimes but maybe someday I won't, and maybe someday I won't play Skyrim.
Important to remember that combat and the difficulty thereof exists in Skyrim only as a rough gauge of the growing power of your character. You use it all the time (unless you're stealth/illusion) but it's not the core of the game. Your character doesn't need to stop playing after combat abilities are maxed out.

You could also always try playing the game without enchanted armour & weapons, or even go with ones not powered up from smithing. At least for awhile to give yourself a bit more challenge, and like was said up the difficulty to master.

Doesn't it go up to something like 81 and a half? I've never actually gotten that high myself yet but everywhere I've seen it always been around 81 if you have every skill maxed out at 100. They may increase the level cap in a dlc like what the did for fallout 3 at a later date. 81 (or 63 for that matter) seems like a pretty random number for a level cap. If it was 50 or 100 or some multiple of 10 that would seem to make more sense.
Also speaking of dlc apparently Dawnguard will have new higher level enemies to fight and a new higher level type of dragon as well. Plus weapons stronger than daedric.
