For me I found the best way was to jump straight into an Imperial Camp and start bashing heads (I sided with the Stormcloaks). There always seems to be a Legate who is immortal so you can simply keep bashing him and increasing your skills, or fast travel between the camps for more fun.
I completed all the Main, Faction and Daedric quests as a Mage in light armour so I donned some heavy Ebony armour and relied on one-handed and two-handed weapons to deal with those Imperial scum.
If you focus on the skills you are least proficient in you'll level-up quicker.

It is really easy to obtain the platinum trophy in this game. I receieved it after a month from buying it and regret getting it so fast because bethesda is lagging it with the add-ons!
Here's a list of he easy ways to level up, hopefully they come in handy.
1: Using the Lover Stone (Helps leveling up faster), or Atronach stone (Helps Magical skills level up faster). Along with the mentioned stones, you may want to use magical spells like summoning and destroying whatever you cast because you gain xp from casting and also destroying your own spells. Use magic spells to destroy them or bound weapons! You can potentially level up at least twice in a single dungeon
2: Join the companions or finish a side quest such as helping Faendal in Riverwood. You can pay for skill training and ask for your money back up to five times each level. Works with plenty of characters around the game
3. Easiest way is to equip a shield, find a pack of wolves and kill all but one, then you'll have to back yourself against a wall where the wolf cant damage you and tape your block button down. Now you can leave it there as long as you like and keep leveling up your block skill. Note: The wolf may eventually cause damage after twenty minutes but that's nothing healing spells can't take care of. I left my controller there for about a half hour and my character leveled up some 40 levels. Good luck with platinum.

Not managed to do my plat yet, nearly there, but had to take a break for exams. For people wanting to level up quick, I suggest first getting a good shield, maybe with a block enchant, and a load of health and stamina potions. Go to a giants camp and just let him go crazy, Good armour is also needed. You'll go up about one block level per smash all the way until around 70 blocking.
For magic, first go to the mages college or dwemer ruins, and buy/collect loads of soul gems. Find a bow/sword with soul trap, and disenchant it. Put the enchantment on a bow and go shoot wild animals (Deer etc.) with it to level your archery and fill your soul gems. Make as many Iron daggers as you can (cheap and gets your smithing up) And watch out for weapons with a "Banishes summoned Daedra up to level..." Disenchant that and enchant all of your iron daggers with it. You'll make a fortune.
When you reach 100 enchanting, enchant a necklace, a body piece, a head piece and a ring with a "Reduce desired magic school mana cost by 25%". Use a grand soul gem to get 25%, and wear all 4 to get the total cost down to Zero magica. Sit in a corner and hold down a spell from that school which can be continuously casted, such as detect life, and watch your magic skills fly. For detect life, go to the busiest place you can as you get more xp for detecting more life.
