I'm not saying this is where the problem lies but sometimes ending late in races is due to using pilot assist: this limits you a lot when racing elite classes. For example, see this video.

Besides the fact that that guy probably plays a bit too much, you can notice that some of those corners and the way he cuts them is just not possible using pilot assist; especially the one on Ubermall after the jump as pilot assist will steer you off the edges where you need to go over them rather than around.
It's annoying coming off pilot assist at first but you very soon get used to it.
It also matters about what ships you use: Pirahna, Auricom, Mirage or there are two others (I honestly can't think of their names) are possibly the best when playing against elite because the elite AI can't use them (you are already) to kick your butt so quickly as well as giving you good acceleration which is needed to catch up.
If this isn't the reason then don't mind me. I'm just posting some thoughts. Hopefully they will though.

It definitely isn't a problem with pilot assist.
I realised it was on by default when I got the trophy for winning a race with it on, and immediately turned it off.
Only went back to see if it helped during the race I was stuck on. It didn't, so I turned it off again.
I'm not a huge racing game fan, and my girlfriend is way better than me at them, and she's managed to get bronze on the race I'm still stuck being last survivor on. It's all good. Guess I just need to get (much) better to beat it.
But I can definitely say the game is cheating, and I don't like games doing that, so I probably won't bother to get better.
